PALEO-FRIENDLY & GLUTEN-FREE MOIST ALMOND CAKE MIX, 450g
Use the mix as it is or add 250-350g of ripe mashed bananas, finely grated carrots, or two whole oranges skin and all, and blitz them in a food processor (if you prefer you can cook them until they are soft which develops their aroma further). Use apple sauce and cinnamon for a delicious Apple Cinnamon Cake. If you have fresh lemons on hand, make a Lemon Cake by adding 1/2 cup of lemon juice and zest to the mix plus the 1/2 cup of water indicated in the recipe. This is a surprisingly nice combination with the almond meal.
Ingredients: Organic Coconut Sugar, Australian blanched Almond Meal, Organic Coconut flour, tapioca flour, baking soda, cream of tartar, unrefined celtic sea salt
Mix makes 16 servings. Use ONE round cake 22cm or TWO loaf pans (20x9cm) or muffin or patty pan cases.
You only need to add the following:
5 eggs 3/4 cups (150g) organic coconut oil ½ cup of water
